Food Safety Awareness Series

Online Employee Training Modules

Description
The Food Safety Awareness Series provides food industry employees with critical food safety knowledge, necessary to foster a strong food safety culture. This interactive, introductory online training series includes 5 general modules and 5 dairy specific modules (15-45 minutes in length) focused on key programs for maintaining regulatory, certification, and customer food safety compliance. Participants are required to answer questions throughout each module, which reinforces understanding and allows for the immediate application of newly acquired knowledge. An examination is available for each module, and if completed with a score of 80% or higher, an electronic Certificate of Proficiency will be provided.  Users scoring below 80% and users who choose not to take the examinations may receive an electronic Certificate of Completion, upon request.

Modules/Topics Covered

  • Food Hazards covers food hazards that can generate a poor quality product, and can make consumers sick if present in our food products. Food hazards are classified as biological, chemical and physical hazards.
  • GMPs covers Good Manufacturing Practices throughout the food supply chain that must be exercised in producing a safe and wholesome product for our consumers. The practices, if applied properly, help eliminate or reduce those hazards learned in the Food Hazards course. Furthermore, these practices can be considered “the law” as they have been prepared by the U.S. Food and Drug Administration, and written in the Code of Federal Regulations.
  • HACCP covers the Hazard Analysis and Critical Control Points food safety system, where hazards are identified within process steps, and procedures are outlined to eliminate the hazards or reduce them to acceptable levels. We learn that effectively applied good manufacturing practices are mandatory in maintaining a sound HACCP program, which support the HACCP system.
  • Food Security covers the practices and procedures necessary to identify and prevent any intentional acts against our business that can cause a food safety issue or impose economic hardship on our industry. The course emphasizes the need to be aware of any suspicious or unusual acts, and to learn what we need to do to deter such acts.
  • Safe Quality Food explains the Safe Quality Foods audit system and the importance of maintaining a high SQF score to meet our customer's expectations. The section will emphasize the importance of knowing what we learned in Courses 1-4, as those issues become a part of the audit process.

Who Should Attend?
